there is a simple relation between oxygen transfer and presence of 'antifoam'.
The antifoam agents act by their high surface activity, they displace other surface active substances, which produce stable foam, while these produce unstable foams. They will block every newly generated gas-liquid interface. Therefore, aeration and addition of antifoam should not be applied in a single step.
